Process of peanut roasting production line
Dried peanut -> Screening and removing impurity -> Weighing -> Soaking and cleaning -> Cooking -> Soaking and seasoning -> Drying -> Finished product -> Packaging -> Storing
Soaking and cooking method is mainly used in the traditional salty peanut production technology, while water dipping method is often used in the new operating process, which must be equipped with crane, hanging basket and other devices. The equipment requirements of soaking and cooking method is lower with flexible process control and suitable for more manufacturers.
Key points of operating:
1. Material: use dried raw peanuts with full particles and no mildew.
2. Removing impurities: screening, air separation or washing methods can be used.
3. Soaking and cleaning: generally, small pools with the size of 40kg, 50kg and 60kg are used to soak the peanuts for 14 hours in winter and 8 ~ 10 hours in summer. Press the peanut with appliance when soaking to avoid peanuts from surfacing. When the peanuts have absorbed sufficient water, clean them for 20 ~ 30 minutes with a special stir cleaner, and then pour the peanuts into the clear water pool for cleaning.
4. Cooking: stew the peanuts for 50 ~ 60 minutes with small fire after being boiled to remove the raw smell of peanuts kernels and make it medium well.
5. Soaking and seasoning: drain the boiled peanuts slightly, then soak them into the cold seasoning liquid for 40 ~ 60 minutes in summer and more than 60 minutes in winter. Remove and drain the peanuts after being tasty.
6. Drying: put the tasty peanuts into the drying equipment (peanut roasting machine or continuous roaster). Rise the temperature through program in 70 ~ 80 ~ 115 ℃ for drying 36 hours in summer and 36 ~ 45 hours in winter to achieve the purpose of dehydration, flavor, color fixing.
Note: peanuts and seasoning liquid ratio is about 1:3. The used or remained seasoning liquid can be used repeatedly. The liquid can be prepared in advance as the supplement for continuous production according to the feeding plan and the liquid consumption of raw materials.
